One of my favorite new super foods is eggplant! It is such a versatile vegetable and is so tasty. I was excited to find this recipe in Vegetarian times today.

Makes about 24 wraps and takes approximately 30 minutes to make

1 Medium eggplant

1/4 C olive oil

2 Tbs soy sauce

2 Tbs apple cider vinegar

2 Tbs brown sugar

2 tsp smoked paprika

1 1/2 tsp cumin

2 tsp kosher salt

2 lb cantaloupe  peeled and cut into chunks

Quarter eggplant lengthwise and slice into 24 long, very thin strips. Whisk together olive oil, soy sauce, vinegar, brown sugar, paprika, cumin, and salt in a 9in baking pan. Add eggplant strips and let marinate. Heat gas grill and grill 2 minutes each side or until strips are tender. Wrap 1 strip grilled eggplant around each melon chunk and secure with a toothpick.
