Honey-balsamic-citrus vinaigrette


Serves 2-4


1 pound salad greens

1/4 C feta cheese

1/4 C Croutons

1/2 C Mushrooms


1 tablespoon strong Dijon mustard

3 tablespoons honey

1 tablespoon  balsamic vinegar

3 tablespoons olive oil

3 tablespoons orange juice

1 teaspoon salt

1 teaspoon ground white pepper


Prepare the salad: place all the salad greens and ingredients in a large bowl

Prepare the dressing: in a small bowl, whisk together the mustard, honey and balsamic vinegar until smooth.

Whisking constantly, gradually add the olive oil, followed by orange juice

Add the salt and pepper and whisk until blended.

Pour the dressing over the salad and lightly toss to coat. Serve immediately.
