Serves 8-10
1 cup soy sauce
1 cup pineapple juice
1/2 yellow onion, finely chopped
1/4 cup sugar
1/4 cup sambal or other hot chili sauce
1 jalepeno, seeds and vein removed, finely chopped
1 teaspoon ground nutmeg
1 tablespoon ground cinnamon
18-24 oz. Beef steak, cut into thin strips
36-48 pearl onions
black bean sauce, to serve
sea salt and freshly ground black pepper
18-24 wood or metal skewers
combine the first 8 ingredients and season to taste with salt and pepper. Skewer the beef strips and onions and marinate them in the mixture for at least 2 hours or overnight. Grill over a medium flame and serve immediately with black bean sauce.
Note: use skirt steak or flap beef but any tender steak will work well.
