Serves 8-10

2 cups long grain rice

1/2 cup vegetable oil

3/4 cup tomato paste

4 cups boiling water

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

Several hours before serving, put the rice in hot water and let stand for 2-3 hours. Drain the water and allow the rice to dry on paper towels for about one hour.

Put the oil in a large pot, add the rice and fry until browned. Drain any excess oil. Add the tomato paste and simmer for 5 minutes over low heat, stirring constantly. Stir in the boiling water and season with salt and pepper. Cover and let cook over low heat for about 30 minutes, stirring occasionally or until the rice is tender and all the water has been absorbed.
