Makes 3 cups

2 tablespoons butter

3 tablespoons chopped onion

½ cup celery, finely chopped

3 cloves garlic, chopped

3 tablespoons honey

1 tablespoon mustard seeds

2 tablespoons white vinegar

2 tablespoons brown sugar

1 tablespoon Worcester sauce

¼ cup fresh lemon juice

1 cup ketchup

½ cup bourbon


Heat the butter in a deep skillet over high heat. Lightly sauté the onion, celery and garlic in the skillet until golden brown. Mix in the honey and mustard seeds and cook for three minutes.

Mix in the remaining ingredients, reduce the heat and cook for 10-15 minutes or until sauce is thick and smooth.

Let the sauce cool before transferring to an airtight container. Store for up to 3 days in the refrigerator.
