Last year I discovered a great Potato Soup recipe from Mama loves food, that is really good and fairly simple. But being a vegetarian and having limited utensils in the Gates kitchen it was my goal to take an already simple recipe and dumb it down even further…aka, doin’ it Amanda style.

What you’ll need

Heres what you’ll need:

6 Potato’s (duh, they are the main ingredient after all)

2 cans Vegetable broth

2 cloves of garlic

1/4 C cream

1/4 C sour cream

1 stick of cream cheese

garnishments:

sour cream

chives

cheese

Step 1

Makings of good soup

Cut up your potato’s, and put veggie broth, garlic and taters all into a pot. Its recommended to use a slow cooker. We ain’t got one of those…we got one pot and it works just fine. Put on low and let simmer for about 2 hours.

Step 2

Add dairy

After the tators have simmered for a few hours drain out a little of the broth. It is recommended to take a 1/2 C of the potato’s out and puree them…..we don’t have any of that fancy stuff. So, throw in your stick of cream cheese, your cream and sour cream. I also like to add salt and pepper and some tabasco at this point…season as you see fit.

Step 3

Let all the creams and cheese melt…about 30 minutes. Once everything is heated up you are done! Garnish with sour cream, cheddar cheese and chives. ( I like adding in some crunchy onions too) YUM! Dig in! Short, easy and all done with ONE pot! Nothing fancy, and totally de-lish!
